Bacon and Shrimp Fried Brown Rice

This just in…everyone who loves crispy bacon and fried rice can now celebrate! This recipe blends two powerful tastes into one simple meal, with the extra bonus of shrimp on top.

The tempting combination of green onion and celery stir-fried in bacon drippings with shrimp, soy sauce, and whole-grain brown rice makes this recipe an excellent addition to your repertoire. After adding the soy sauce, fresh ginger, and pepper to the rice, form a well for the scrambled eggs and fold them in.

Feel free to use any skillet or wok you have at home.

Top Tips

Ingredients


  • 1 cup Blue Ribbon® Whole Grain Brown Rice
  • 4 slices bacon
  • ½ cup green onion, sliced
  • ½ cup celery, sliced
  • 1 lb. shrimp, peeled and deveined
  • ¼ cup soy sauce
  • ½ tsp ground ginger
  • ¼ tsp ground black pepper
  • 2 eggs, well beaten

Steps


This easy Fried Rice meal with bacon and shrimp is as tasty as your favorite Chinese take-out restaurant, but with Blue Ribbon® rice, it’s even better. When you have the ability to add your own ingredients at home, you are not only doing favors for your wallet but also your palate.

Step 1–Prepare the Mahatma® Whole Grain Brown Rice according to package directions and let it cool.

Step 2–In large skillet or wok, cook the bacon until it turns crispy. Remove the bacon, crumble and set aside.

Step 3–In the same skillet or wok, stir the onion and celery into the bacon drippings and stir-fry 2 to 3 minutes. Add the shrimp and stir-fry 3 to 4 minutes or until shrimp are firm and pink.

Step 4–Stir in the cooked rice, reserved bacon, soy sauce, ginger, and pepper.

Step 5–Make a well in the center of the rice mixture and pour in the beaten eggs. Continue to heat until the eggs begin to set. Then mix the eggs in with the rice.

Step 6–Serve with additional soy sauce, if desired. Enjoy!
