This chorizo recipe, coupled with our Blue Ribbon® rice, is not only delicious but also provides a Mexican twist to the celebration. As an added bonus, the spicy chorizo and brown rice mixture is combined with chopped vegetables and protein-rich lentils to produce a flavorful powerhouse dinner!
Cook the vegetables with an adequate amount of smoky paprika for a Spanish flavor.
Love chorizo but don’t know what to do with it? Don’t worry, we’ve compiled a list of dishes using your favorite Spanish sausage. One of our favorites is the Lentils Brown Rice and Chorizo dish, which also has carrots, onions, and celery.
Step 1–In a large pot combine 8 cups water, rice, lentils and salt, if desired. Bring water to a boil. Boil uncovered 30 minutes until the desired texture is reached and drain excess liquid.
Step 2–In a large skillet over medium heat, cook the chorizo according to the package directions. Drain any excess fat.
Step 3–Add onions, carrots and celery and sauté until vegetables are crisp-tender, about 5 minutes. Fold in cooked rice and lentils. Serve garnished with cilantro.
