Spanish Brown Rice

This rice dish is ideal for any occasion and will add depth and richness of flavor to your next dinner party or regular lunch prep. To create a fuller flavor, substitute chicken or vegetable broth for water, then add liquid as needed to achieve the desired texture. Need some protein? Once the rice has reached the correct texture, stir in the shredded chicken or precooked shrimp.

Ingredients


  • 1 cup Blue Ribbon® Brown Rice
  • ¼ cup butter
  • 1 onion, thinly sliced
  • ½ green bell pepper, diced
  • 2 cups stewed tomatoes, with juice
  • salt and ground black pepper, to taste
  • 1 cup water

Step 1
Heat butter, margarine, or oil in a saucepan. Add onion, green pepper, and rice. Cook over high heat until lightly browned.

Step 2
Add tomatoes, water, salt and pepper; mixing well. Bring to a boil. Cover tightly, lower heat, and simmer gently 30 minutes. Serves 4 to 6.
