Tuna Patties with Brown Rice and Avocado Mayo

Ingredients


  • #To Make Tuna Patties :#
  • 1 cup Blue Ribbon® Brown Rice
  • 2 cans (6 oz each) tuna, drained
  • 2 eggs
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh chives, finely chopped
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup vegetable oil
  • #To Make Avocado Mayo:#
  • 1 avocado, halved, pitted, peeled and sliced
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1/2 tsp salt
  • #To Make Arugula Salad:#
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 8 cups arugula

Steps


Using simple pantry products such as Blue Ribbon® rice, canned tuna, eggs, and seasonings, you can prepare a wonderful meal to serve with homemade avocado mayo and a simple green salad.

Brown Rice with Tuna Patties

Step 1–Cook rice according to package directions; let cool completely.

Step 2–Mix together brown rice, tuna, eggs, parsley, chives, lemon zest, lemon juice, garlic, cumin, paprika, salt, and pepper. Divide into 8 portions; shape into 1/2-inch-thick patties.

Step 3–Heat oil in a large nonstick skillet; in two batches, cook patties for 3 to 4 minutes per side or until golden brown and heated through.

Avocado Mayo

Step 4–In a blender, purée avocado, mayonnaise, lime juice and salt until smooth. Refrigerate until ready to serve.

Arugula Salad

Step 5–In large bowl, whisk together oil, lemon juice, honey, mustard, salt and pepper. Just before serving, add arugula to bowl; toss well.

Step 6–Serve Brown Rice Tuna Patties with Avocado Mayo and Arugula Salad.

Top Tip

Instead of arugula, use mixed greens, spinach, or chopped romaine lettuce.
